Valorisation of proteins from palm kernel meal

A process to extract proteins from palm kernel meal was investigated. sequence of unit operations implemented and optimized in order ensure an optimal efficacy. It has been determined that among all the enzymes were tested, Alcalase had highest capacity hydrolyse solubilize them solution, especially after using 5% dry matter PKM as a starting material. Thus, 80% solubilized supernatant treatment, but only 60% recovered permeate applying ultrafiltration (300 kDa), with purity 60%. Functionality tests revealed protein fraction obtained very high solubility mild foaming emulsification capacity.
